Okay so this is weird way to start this post, but I actually only have ONE finished photo of this incredible cookie. But in a way I think that’s just a testament to how amazingly yummy and perfect they are, because they were snatched up so fast I could barely even take the one.
You want to pay close attention to the steps of the making of this special cookie; it’s quite a labor of love. But TRUST me, is it ever worth it!
Here’s what you need:
2 1/4 cup all-purpose flour
1 1/4 teaspoons baking soda
1/4 teaspoon of salt
2 sticks (1 cup) unsalted butter
1 1/4 cup packed dark brown sugar
1/4 cup granulated sugar
1 large egg plus 1 egg yolk
1 1/2 teaspoons vanilla extract
1 tablespoon plain greek yogurt
3/4 cup semi-sweet chocolate chips
1/2 cup milk chocolate chips
1/2 cup dark chocolate chips
1 jar of Nutella, chilled in refrigerator
Coarse sea salt for sprinkling
STEP 1: Preheat oven to 350 degrees and put Nutella in the fridge.
STEP 2: Whisk together the flour, baking soda, and salt in a bowl and set aside.
STEP 3: NOW READ THIS NEXT PART CAREFULLY.
Melt 2 sticks of butter over medium heat. YOU CANNOT LEAVE the butter by itself. Ever. It’s extremely important to the heavenly perfection of this cookie. Stand by its side and stir until it is ready to smell like a nutty aroma (it will take about 10-15 minutes). Again, it’s extremely important you don’t leave, and you have to remove it IMMEDIATELY when it turns a caramel color.
Note: the browning usually happens over two “foams” — the first minute or so it will foam up (again, you are constantly stirring). Then some time will pass and toward the end, it will foam again. You won’t necessarily see the caramel color happening, so you have to rely on your nose on this one.
It should look something like this:STEP 4: With an electric mixer, mix the butter and sugars until thoroughly blended. Beat in the egg, yolk, vanilla, and yogurt until combined. Add the dry ingredients slowly and beat on low-speed just until combined. Gently fold in all of the chocolate chips.
STEP 5: Chill dough in refrigerator for 2 hours. Again, this is an important step, so even though it means waiting longer, don’t overlook it! It needs time to solidify and absorb the yummy flavors.
STEP 6: Create a dough ball roughly the size of a small lime and flatten on your hand. Take small spoonful of Nutella (you may have to roll Nutella on your palm for a second). and plop right in the center.
STEP 7: Wrap your cookie up into a ball around the Nutella blob.
STEP 8: Gently flatten the tops of the cookies.
STEP 9: Bake for 9-11 minutes. Sprinkle with salt. Voila!!
